Can anyone give any good suggestions for beating artillery-heavy Ottomans with infantry and cavalry based armies?

Sure, but I hope you have a bit of artillery your self. You need it to weaken their cavalry before you send your out to kill their guns.

Against artillery it is your cavalry that is needed. If you have guns concentrate your fire on the cavalry nearest group you are going to take out. The enemy will be firing at your guns anyway. I find it best to place my batteries in the center of my line protected by infantry.

Send your cavalry by the most protected route to the enemy guns. They always put them on the flanks so it should not be impossible. Charge enemy guns from the flank or rear and watch out for obstacles.

Using infantry to assault guns is just folly. They will get just cut to ribbons. Once their guns are gone the enemy will come to you so your horse are the only units you actually need to move.
