There was a thread about this, which I can't find regretfully.
It was something about finding the preferences file in the EB folder, and editing the it. You had to change "start in windowed mode" to FALSE if I recall correctly.

Actually, you don't need to do that, windowed mode makes the game more stable.
What you need to do is change your resolution in medieval2preferences.cfg to match whatever your actual screen resolution is.
It began on seven hills - an EB 1.1 Romani AAR with historical house-rules (now ceased)
Heirs to Lysimachos - an EB 1.1 Epeiros-as-Pergamon AAR with semi-historical houserules (now ceased)
Philetairos' Gift - a second EB 1.1 Epeiros-as-Pergamon AAR
