View Full Version : Help me prepare that fish
Having perfected the steak I am growing increasingly bold, so I had a go at fish, and it was a total disaster. It was tasteless, it fell apart when I tried to flip it over, even the cat didn't want it. Now I love fish, when I am in a restaurant I always go for the fish because these dishes are so much more fun.
Right now, I got a nice piece from this handsome little fellow, we call it zeeduivel 'sea-devil', almost too cute to eat.

Gimme some tips, butter or oil? Thick or thin bottom whateveritscalledyoubakeitin, what herbs? How long? Questions questions..

I dunno about zeeduivel. I do know that fish generally requires a lot less cooking time than beef, pork, fowl, etc.
I usually mess up trying to pan-fry fish. So now I toss it, with olive oil, sliced onions, a little citrus juice (lemon and/or lime), and garlic powder, into aluminum foil - seal it up, leaving the ends open, and bake it, medium heat, about 20 minutes. That makes it kinda half-baked & half-poached.
Serve with veggies and rice.

think that's what we call monkfish, its a bit meatier than other fish and should hold its texture quite well.....
Tip one, don't show anyone eating it the picture, in case they don't agree that its cute!

If it is monkfish there are some great Korean dishes for it. You may want to do some research there.

I would have to agree with putting fish in the oven. I cook both ways (frying and oven), but I've always found the oven a little easier. Your idea sounds good - I think I'll try it.
Another thing that's really good are salmon fillets.
Sweet Salmon With Almond - My Own Creation
Ingredients:
Cider Vinegar
Honey
Sliced Almonds
Maple Syrup
Salmon Fillet
Oil
Throw the fillets into a pan with oil, just to sear them on both sides. Mix the rest in a bowl in the proportion you like - I usually go by sight, taste, and texture. IMHO, the sauce is ready when it tastes mostly like the vinegar and syrup, with a touch of honey, and only a little less runny than it was before. It should be a nice light brown colour. Put the sliced almonds (a few) into the sauce.
Take the fish out. Put in an oven dish, spread/pour sauce over top (not much - just give it flavour. For a family of three, you only need maybe a fifth of a small bowl of sauce, maximum). Cook salmon to liking. Garnish with remaining sliced almonds.

hot oven , ghee , uncovered for 10 minutes , its good with no more added than dill and pepper in the ghee , it is good with a cream based sauce , but don't over flavour the sauce as its a waste of a damn good fish .
