I have never seen or heard of Muslim's employing crossbows. Did they do so only occasionally or is it historically accurate for them to use them in large quantities?

no, but you can get them as mercenaries

In the game, Muslim factions CAN build them.

AFAIK in history they were not that common in the east.

Anyone with knowledge care to elucidate?

Baybars the most famous Mamluke sultan was nicknamed the crossbowman. The answer is muslim armies did use crossbows historically.
