Is there any way to decrease the accuracy of missile weapons?

Without creating new animations, that is. I noticed this little line in descr_projectile: "accuracy_vs_units". Could I just modify that?

Yes. Increase the value (the closer to 1 the less accurate).

You can also change how missile accuracy varies by target. You can do that in battle_config. There the higher the value, the more accurate it is.
