Basic archers, ballista, catapults, urban militia, militia sergeants, basic spearmen and peasants (granted there is a difference between muslim and christian peasants).

Ok, who don't have them?

Besides these there are the dedicated mercs such as the Alans and Almugharvars, they too are available to all.
Swiss units are also available to all if they control Switzerland (ignoring the bug).

Erm, yes, I stand corrected. Almohads and Egyptians have Nubian spearmen instead of the basic variant.

Yes, they are fun to play with (have modded a little with them), but the Turcopoles are not MP'able either though they should be available to all Catholics.
