I think any heavy cav with armour upgrades do extremly well. The problem i find with lighter cav is that we the unit u're hitting from behind routs the cav gets trampled under http://www.totalwar.org/ubb/frown.gif !
i flank with light cav never rear attack em.
But the best really depends on what you can train and what faction you are doesn't it.
Best way to work with Cav ??
Here is my way.
Take a unit of heavy Cav. ... the heavier the merrier. Set it up on the Flank of your army. Set it to "Wedge Formation" and on "Hold Formation". Wait until the enemy Spearmen clash into your Spearmen. Then Move your Cav. into their flank. Charge into their Flank. Watch the Cav. massacre half their way up the Spearmen formation ... watch them break ... watch them die ... kill all prisoner ... ; Your a bad boy ! http://www.totalwar.org/ubb/biggrin.gif
You have to move your Cav. carefull ... when they charge they will aim for the Banner in the middle of the enemy Formation so you need a 90° arc to achive the perfect flanking. Also turn your Cav. before the charge and wait until all men are back in formation. You Cav. would do well to have the "Unstopable Charge", meaning a charge rating of 8.
Also make sure to protect the flanks of your wedge if necessary !!!
