Having a couple different skins in each unit back in M2TW was cool, but for ETW wouldn't it be better if, instead of individual soldiers in the same unit having slightly different uniforms, get whole units to have slightly different uniforms from other identical units?

It would be nice if there was a way to make it so that each individual unit (in the case of trained units, anyway) had a unique color combination for cuffs/shoulders/pants, within certain limits of course. But, alas, as I have said before, if CA was too lazy to make the factions visually distinct outside of color, I doubt they're going to bother with something like that.

On the subject of uniforms: Does anyone know why the Dutch soldiers wear orange on the campaign map, but blue on the battle map?

I can’t remember from my Dutch Campaign, but I think they were always blue.

No, they definitely wear orange on the campaign map.
I just find it odd that their campaign map uniforms and their battle map uniforms don't match.
One is the royal colours and the other the army colours?
Well Orange and Blue are both colours of the UP flag, and further more, the stadtholders of the republic were from the house of Orange-Nassau
