Is there anyway to charge a missile cavalary without depleating it´s missile?

Yes, the same way as you order any unit to use its second weapon (Bow - sword, Spear - sword,...).

Alt+Click instead of just click.

hold alt when you tell them to attack, works with all missile infantry.

Probably don't need to tell you, but remember to turn off fire at will as well.
