As I may have mentioned I was in Cuba last year and discovered the delights of Mojito's.
My problem is that now I am home I can't get the knack of making them as everyone knows a good Mojito is great, but a bad one is terrible.
Anyone know how to make a good one, where you get that sherbet-ty taste?

Meh, waste of good rum.
Seriously though, you aren't using Bacardi are you? If so try Havana Club white rum, makes for a better balance.

Don't forget the ice. Ice is key. Plenty of ice.

Are you using sugar or syrup?

Mojito´s are among my favourite drinks. What you need is fresh mint leaves.rum, soda, crushed ice and bit of sugar. put 10 mint leaves on a glass or a mixer.Crush the leaves. put a hint of sugar among the crushed leaves. Add some rum. Fill the glass/mixer with crushed ice.Last add soda so the liquid will reach the top of the ice and your done. Its up to your own tastes how much rum and sugar you want to use,but the amount of soda should not be much. I cant stand too sweet Mojito´s so i would suggest to leave the sugar to minimum or even drop it, if you dont like your drinks too sweet.
I prefer my mojitos to have that crisp, sharp minty taste clashing against the flavour of the rum and coolness of the ice; sweetening the deal just takes away from the sensation the drink evokes.
Remember, it is brown sugar.
Use sugar instead of syrup, and use fresh mint-leaves, and plenty of ice.

Still can't get it quite right, but I'll keep trying till I do.
I am getting closer and was using far too much soda.

Just keep increasing the amount of rum and eventually you will be happy no matter how the drinks will come up.~;)
Or be a man and drink bloody mary's, with plenty tabasco
