Is it possible to translate the mod into Italian?
If not, you know any project in this area?

There are no translations of EB that I am aware of. Although changing the text files is fairly easy, the amount of text in this mod is massive and would take a huge amount of time to translate.
There was one guy working on it in either German or Portuguese. I don't think he got very far though due to the incredible number of text.

If I were translating Europa Barbarorum, I would start by translating all menu items.
Then I would translate the text one would find within the info-boxes that arise when your mouse hovers over a unit on the battlefield. Of course I am talking about all of that information except the unit title.
As for unit titles, since EB units are entitled in the format "Native Name (English Name)", I would leave the Native Name and simply translate the parenthetical English into whichever language my translation project aims for.
If you have been following this systematic approach, you would rightly envision each release or iteration of the project as updating/adding each phase of translation.
Then and only then would I spend time translating descriptions, which form the bulk of the text. These of course would be building and unit descriptions. There are also scrolls, such as diplomatic, financial, victory screens, and if you have truly lost your mind, the This Year In History! More power to those who translate.
By the way, since I'm no modder, it would be much appreciated to those wishing to translate if there were a list of files and directories where we can find each of those phases of translation I mentioned. It would streamline the process.
When I downloaded EB the first time (0.81) I checked for german translations since it was hard to understand the huge amount of texts that are in EB. There was a translation, though only partial, and it was not by a single guy, but I don't know if anyone kept working on this for later versions. I never used the translation and it was the right choice, my english has become a lot better because of EB but especially the forums. So I would recommend to buy a good dictionary...

That has never been changed by EB, it's still on german on my installation, though there's not much more that's not english and it's the only thing I can remember that was translated wrong in RTW (when troops are on the last level of stamina they are shown as exausted (erschöpft) while in the level before it shows totally exausted (völlig erschöpft) - don't know how it's named in the english versions).

This is because that is a German installation of Rome: Total War. Europa Barbarorum is installed in English alone, even if it does not alter every text file. Would you like to do a German translation?

hmm... I start to wonder why we making our mod in english for now..... really really wonder about this, your word gave me some... headache of silly inspirations...

Should? I quite agree that, in general, learning English is a good idea. However, not everybody has the time or opportunity; and not everybody needs to do so.
