Pretty much you got yourself surrounded...
I don't know how many armies you have, but you will need to protect Kinai with at least a full stack, while one stack or two half stacks take over Ise, Mino, Owari, Mikawa, Totomi, Suruga...
As for the east either guard the mountain passes in Shinano and Kai, or defeat those stacks and take over Izu, Sagami, Musashi... I'd advise the latter as you will cut down the major recruiting area for the Hojo...
If Echigo doesn't have good roads a small garrison should be enough while you push northwards with your daimyo, otherwise either a full stack there or move to conquer Tohoku...

It depends, what tactics you want to use. If you want to defend sacrifice some of your troops and the province kai. defend north shinano and echigo. attack in the west. If your relation to the west is bad(war in some rounds) attack in the southwest. take kii, settsu(good to defend), ise and then go for owari, mino and the provinces southeast of them. Try to prepare your defense in the west as late as possible. Scouting will help you.

Don't fight them directly. Take small armies to defeat ungarrisoned castles and make vassals (to eliminate any hassles).

Looks like you should take your troops from Kawachi and Yamato and head east, to give yourself a secure heartland, so you don't have to defend so much. I see you've taken Kyoto, but no RD yet? You might want to make some vassals as you need the trade and tribute, but if pre RD keep an eye on them as they will likely come after you post RD. Maybe send in a cavalry stack and loot a few undefended Hojo provinces (usefully also postpones RD)? Then demolish all the buildings, that will cost them a packet.

He won't have a secure heartland. Hojo isn't the only problem. He hasn't enough money to loose the area around kyoto. And this can happen, when his armys move east, ignoring the chance to get some important ground, before he gets the 3rd problem.

The screenshot shows that he's not at war with the light blue guys (Takaoka?), whom he borders around Kyoto, so if he can keep it that way until he takes the provinces around Owari, it will make things much easier.
