Gendarmes were armed with lances historically. the finally abandoned them mid-late in the 16th century and became pistoleers in the then-new Dutch model - firing pistols in the charge just before striking home with sword.

I believe the change came about because they weer found to be inadequate against the Dutch system during the Hugenot wars.

The French sticks refer to the way they'd "stick" their lances into people befoer covering them with lashings of onion, garlic and red wine.

When they became pistoleers they added Hollandaise sauce to the menu.
