Do you strive for historical accuracy or a challenge in medieval? When I play Byzantium, i make sure every province i own can train byzantine infantry, but i only build a master swordsmith in constantinople and the 5 provinces bordering it so it simulates how citizen troops in roman times were generally more well equipped then auxilliaries.

Good question. I think it depends upon what you consider fun and how easy it is for you to beat the game. If the game is too easy, they you want to do things which handicap you more in order to up the challenge, historical or not.
