I have been making good use of the new feature that allows you to destroy buildings in a province before abandoning it. However, it does not seem to be possible to destroy the Castle, which when left behind gives the new resident a head start in upgrade production. Am I missing something?

can't destroy castles, the only way to get rid of them to have multiple/consecutive invasions of the same province. each time the province is taken nby a new army, the castle is downgraded by one level, eventually it will disappear entirely.
so, if you attack a province with a fortress, it will become a castle, if you abandon it and an enemy army takes the province, it will be gone c ompletely.

Destruction of buildings is one of the many, many HUGE improvements instituted with the MI expansion. Because it is now possible to raze buildings with impunity, it also becomes possible to take a small, high-honour army and ravage the enemy's rear without holding ground, a tactic which was simply not available in previous incarnations of STW. Yeah! That's also why the 1580 campaigns are actually fast to complete. You don't worry about koku that much anymore http://www.totalwar.org/ubb/biggrin.gif

(but the battles are harder)

I like it because in the beginning I will have few provinces and fewer than the few will raise all my troops, then as I expand I can take advantage of provinces closer to the front lines to raise new troops, save the ones that specialize in any given unit. With the old troop producers I keep some things, like drill dojos and weapons upgrades and raise my BN and K in them...usually one for each...
