Playing a Spanish campaign. Tearing down Mosks and building churches all over muslim Africa is FUN. After a post from someone praising the spanish inquisition I had to try it, but in a single turn the zeal of my province dropped from 54 to 29. I build a Cathedral to compensate for this, but my Cardinals only seem to convert, but do not improve the zeal. why oh my god why?
You need to control the actions of your inquisitors. When you right-click on an inquisitor, look at his mission. if he's preaching, then the zeal for the province he's in will rise.
Sometimes inquisitors get a little carried away and you get the info parchment 'an inquisition has begun in..' and the inquisitors mission says 'inquisition of individual'. This causes the zeal of the province to drop dramatically. When this happens, move the inquisitor(s) out of the province and wait for the message stating 'the inquisition has ended..' then you can start rebuilding your zeal.
Train two or more inquisitors. Put half in the province in which you wish to raise zeal and the other half in a neighbouring province. Then, each turn switch the places of the inquisition teams. This prevents them from spending too much time in a single province and starting to burn people, while raising zeal every turn.
And yes, bishops and cardinals only affect religion, they have no effect on zeal. Having a bishop or cardinal in the same province as an inquisitor reduces the chances of an inquisition starting, however.

Do the Othodox Christians have any way of raising Zeal? (If they don't, I guess its less important to them without the use of Crusades or Jihads)

No, Priests and Orthodox Bishops have no effect on zeal.

In my experience, putting the lower level inquisitors (not the grand ones) into competing catholic faction's lands help reduce zeal in those provinces. Inquisitors raise zeal quite slowly and they more than cancel the improvement in zeal once they go on a burning rampage... As a result, zeal in your enemy's provinces goes down.
The grand inquisitors are my preferred catholic assassins: they can burn anyone (catholic) in no time...

But a group of grand Inquisitors do that themselves when properly managed.
Maybe you want to increase your neighbors zeal and decrease your own - this will maximize your gains abroad when crusading and will minimize your opponents gains in your own lands. I always try to burn as many of my citizens as possible when playing a non-crusading catholic faction.
