i feel personally that omitting the great duchy of burgandy in europe was a mistake as i think that having a burgandian kingdom would have balanced the gameplay in europe by been between french and german and italian kingdoms and would have made strategy thinking more interesting and than instead of going after each other french and hre they would have to play with third factor of burgandy
secondly khazar state
historically byzantines maintained a friendly relations with khazars who acted as balancing weight between byzantines and muslim empires and other nomad hordes
i feel that if they builtup their kingdom by taking other eastern provinces and clashing with poland and muscovy they would have added dynamism to the campaign map and they on mongol invasion could either absorb it and collapse under it as did other nomad kingdoms did in the same area
they can also act as balance agains byzantines expending into eastern europe too
