Just a thought: how about instead of randomizing how long a castle can hold out before falling, you give the player the opportunity to stockpile supplies? You could have 1 year's supplies cost 100 florins (or denarii, or whatever the currency will be in RTW). When a province is not building anything, it could be stocking its castles.

You have to remember that food spoils and I dont know exactly how they supplied the food for the castle. So taking that into consideration you have to look at other means. Don't know how often they used chickens but you could stockpile grain for a long time considering it was well kept. Use the grain to feed the chickens and hope you get plenty of eggs everyday. What would need to be looked into is how castles held out first and then see how you could supply it. Another thing is that in a siege food occasionally did get snuck in and I'm guessing that if they did'nt have enough men to assault the castle it probably would have been hard to stop all attempts in doing so.
