The attacker must move first against the defender, the defender can wait for the attacker and choice for a better position on the battlefield.

Welcome to the org http://www.totalwar.org/forum/non-cgi/emoticons/wave.gif
Take a look at the post labelled 'Beginner's Guide to Total War', it's amongst the sticky topics at the top. There are two sections that might interest you. The first is chapter 2.3 Armies and units, this section gives a quick rundown on the more common army types and should give you a few ideas of what to include and in what numbers when building an army to attack or defend. The second section is 3.7 Tactics and fighting styles, this chapter has a demonstration (featuring pictures to make life easier) of several basic formations suited to both attack and defence for all factions. The interesting chapters are a little too long to cut and paste here but they are quite easy to find (especially chapter 3.7 as it is the only one with pictures) and should give you some ideas to play with.

Formations for attack and defence vary considerably depending on the situation and terrain... We all play the game in our own unique way.
Should you wish to debate tactics there are many of us here who would enjoy doing so
