Have begun playing the Turks and am enjoying them very much. Played first 125 years of an early campaign using almost exclusively cav armies. Did okay, but began to struggle by mid 1200s. Just completed a High campaign and actually won (GA), but could not rely on cav alone.

Many parallel/similar troop types -- Futuwwas, Turcoman foot, Ottoman Inf., Jan Archers, Jan Inf. -- Armenian HC, Ghulum, Sipahi, Kwarz., and so forth. Have different stats, strengths, weaknesses, but wondered what historical distinctions there were, how they were employed, etc.

Can anyone recommend good resource(s) for historical information on the various troop types, typical army composition, tactical methods, and even historical orders of battle for specific engagements?

this is the job for Sinan http://www.totalwar.org/forum/non-cgi/emoticons/wink.gif But an advice from me: look for any books by Halil Inalgick, he is the greatest osmanist historian. He is somewhat subjective when it comes to extern politics, but the info he gives about the ottoman army must be highly regarded.
