And also, how do you keep ghazis properly defended from catholic cavalry as the Almohads?

Ghazi is a very broad term.
May as well have made them mounted but that would have added another weak Muslim Cav.

You can protect em with Nubians, Berber Camels, and Saharan Cavalry for example.

If Jinettes are getting too close:

-Nubians in front
-Archers shoot Jinettes
-Saharan Cav flanks and tries to draw remaining Jinettes
-Ghazi sit behind archers

How's that ?
