retraining units?!

i recently bought the dodgy version of shogun total war in a dvd style box, with no manual etc, and had a lot of problems with adobe acrobat so didnt have time to read the manual etc. have suceeded in destroying all opposition on easy but had no idea i could retrain my troops! what does this involve and how do i do it? does anyone have any unit profile for the mongol invasion units also?
