The unit descriptions that are displayed when you open the unit information window, like Defend well vs cavalry or Shoot poorly in bad weather. How are they determined for each unit ?
I can find no reference to these values from the crusaders_unit_prod (or any other) file. Are these fixed values or calculated from the unit stats ?
If they are fixed, where are they stored ? If calculated, does anyone have the formulas ? And what stats values like Shoot poorly in bad weather determined by ?

They are determined by the values indicated for every unit in the crusaders_unit_prod files. Look at its header or, mostly convenient, download the units and buildings excel sheets (they can be found here in the download section) and have a look at them. Spearmen, for example, have a defending bonus (+2 if I ain't wrong) versus cavalry, so the program put out the Defend well vs cavalry text line.

That’s what I suspected, because I couldn’t find anything static in the text files.
For some of these tips, it makes sense that they are calculated from the unit stats but I am looking in the tips translations (in “changes.txt”), I don’t remember if all the tips are indeed appearing in game but for some of them, it is hard to tell what stat value it is based on like “May charge without orders” or “Elite Unit”.
Is there any place I can find the exact way and by which values these tips are determined by ?

The excel sheets of whom I wrote in my precedent post make all the calculations.
For example if you give at your unity a spear weapon it'll gain a bonus against the cavalry and a higher charge factor than normal infantry.

I am not sure I understand your answer or I didn’t explain myself well.
I am aware of the stats that are present in the “crusaders_unit_prod” file or in other sources, like the excel sheets made from them. Also, based on your previous reply I understand that the tips are calculated from these stats on the fly. So, if I change the stats in “crusaders_unit_prod”, the tips will change in game to reflect this.
What I want to know is the exact formulas and values how these tips are determined. Like, how much unit needs to have Defense, in order to get “Good Defense” tip, does range units always get “Shoot poorly in bad weather”, what stat determines “Weapons cause fear” tip etc.
Basically, I want to be able to look at unit stats and know which tips will this unit get as if I was looking at the unit info page in game.

The crusader_unit_prod is made from the excel production sheet, not the inverse.
Most of the stats have a range from -9 to 9 (correct me if I'm wrong), so a charge of 8 is irresistible charge because is close to the max limit. I don't know if the game would say the same with a charge of 7, make some experiments and you'll find it out easily.
The same with all the other stats (attack, defence, armour, defense vs. cavalry, attack vs. cavalry, etc...)
For the others:

All gun weapons cause fear. This effect is hardcoded in the game but in projectilestats.txt there's a field wich determines if a projectile is from a gun or not.

I think is related to the lethality and the range of that type of projectile, always determined in projectilestats.txt.

Are you talking about the excel sheets that are downloadable from this site ? I always though these are just some excel sheets that someone made from the text files so it will be easier to view the data. I always wondered what these comments were in the [messy, misspelled and in inexcusable format] crusader_unit_prod file about workshet, I guess now they are referring to the excel sheet…
Are there VI excels available for download ? I think I can only find ones for MTW 1.1 in the org.
From your answer I also understand that there is probably no standard and documented way to figure out all the possible tips. Just one by one trial and error, guessing each one. Right ?

The sheets are downloadble here. The files are MTW_Prod_Files.zip and Vikings_Prod_files.zip. They contains both units and building data.
You can use gnomeditor to sort through the mess of the prod files (always downloadble here), but be careful that sometimes it appends unuseful chunks of data at the end of your edited files (check them with notepad http://www.totalwar.org/forum/non-cgi/emoticons/wink.gif).
There will surely be a standard way for the program to determine the tips (if charge is over 7 then write irresistible charge sorta of thing) but I never seen it documented and sincerely I don't care of it too much as with the excel sheets you can compare the stats number of two units easily and together with your game experience is easy to figure it all out.
