Should I be able to build Knights of Santiago ( the spanish crusader units ) after a succesfull crusade?
If so, what are the structural demands for them?

Build a Church then a Chapter House in Leon, and start your crusades from there, 'cause I think KoS from Leon get a provincial valor bonus. The KoS will appear in your crusade stack, and if any survive the crusade you can then use them in your regualr armies. One trick to use if you want crusader units in your regular armies is to send the crusade against the Almos, targeting their closest province to you.
KoS are essentially Chivalric Knights that are not impetuous. There is no way to actaully build them (for example like you would a Chivalric Knight). Only the Spanish and Aragonese can get them.

Thanks Ichi, I started some crusades and find the kinghts of Santiago beating up all enemy cavalry when dismounted http://www.totalwar.org/forum/non-cgi/emoticons/smile.gif
Though it's too bad you only get one at each crusade, I read about modding units into the game.
How do you do this? I only found the unit production file but it's a bit messy inthere, what to change etc..

Well you can dismount all knights during a castle assault situation...
Otherwise you would have to wait for the High period and the Chivalric level Knights who can also dismount.
