I've seen numberous references to different unit size settings, but have never seen or read how to set this.

Though I wonder if it is a multiplayer only option, as I've stuck to SP so far.

Get gnome editor, open up defaults- select unit prod file
under the heading unit size-edit save as .txt and move into the main directory of MTW and overite-done

there is also a slider on the options screen (performance tab?) which is a global scale factor

something like

small, default, large, huge

which is just a global multiplier on unit size

Correct, the unit-size slider is in the performance menu (at least is was in Shogun). Larger units are less manoeuvreable and make the game slower, but the battles get a more 'grand' atmosphere. However, there are two things you should take note of:
1- Units will take twice as long to train if you double their size (again, I only now this for sure in Shogun);
2- not all units will grow in size equally: kensai (1 man units) will stay one man, effectively their halving combatpower. The same applies to the Hatamoto of your Daimyo. In Medieval things are different:

In Shogun their was a way to cheat with this: you could change the unitsize to double, merge to double size units, and then change the unitsize back to normal. Result: you could create units of 120 men, while your enemies were limited at 60 men-units. Very unfair, and I don't recommend doing it at is spoils the fun.

If I'm not mistaken you set the unit size at the beginning of the campaign and can't change it afterwards.

yup, thats definitely true on MTW:VI not sure about anything else

when i changed from small to huge i needed to start a new campaign to see the difference

I just tested it in Shogun, and it didn't work. Either they changed it with the patch or I was just mistaken.
