1) When people on here talk about playing multiplayer, what do they mean? Is it through a multiplayer service, LAN, or some other way?
2) Some virtues can be improved, like the Magnificent Builder ones, the Expert Attacker/Defender ones, etc. Others seem totally random, like the Chinless Wonder one. Is there a list somewhere of all the Vices and Virtues, which ones are controlable and which are not?
3) Does Gnome Editor work on the build_prod file too?
4) If money is no option, why bother with units like Highland Clansmen and Gallowglasses (both of which are great at flank and rear attacks, but lack the defense to go toe to toe) if you can build Feudal Knights?
5) Is there a way to disable the date at which the game automatically ends?
1) I'm not totally sure.
2) Sadly, I don't know of one.
3) Yes, it does.
4) Depends. Gallows are faster then footknights - and they don't carry all that armor, meaning they're far more useful in the desert. They also don't have anywhere near the building requirements that knights do - knights require horses, armorers, and a royal court. Gallows require just a swordsmith, and clansmen just a fort.
5) Disable, I don't think so. Though, I'm sure at least in VI you can probably move it to some ridiculously late date like 20,000 AD.

1) multiplayer games hosted on gamespy
2) do a search on vices, there's gotta be a dozen threads about which ones you can groom and which you can't. 95% of the V&Vs just happen.
4) i don't know, why bother building anything except super units if money is no object? But, those gallowglasses will rip feudal knights apart in the woods.
5) go to the download section (http://www.totalwar.org/Downloads/Tools.shtml) and get the year1454_limit_fix file. works on games in progress.

In answer to question 4 every single unit has a use you just got to utilize them correctly and with the correct faction's gallows are bascially english ghazi's and super units are not a great as you think check the stats again on alot of them.
in terms of SP, the higher quality units also have higher base morale, something that bothers me about the other units. I am used to MP, so I don't understand sometimes why their morale is so terrible.

Many units have counters and the Feudal Knights, if facing a diversified army, would be slaughtered by good halberdiers, and if dismounted, they would be slaughtered by longbowmen and the like. Even though it's corny to say, a good mix is a good thing.
