How many units and what types are put into the crusade when you start one? How is it calculated?
Is there anyway in the uni_prod file where I can change that stuff?

I used to have like 2 knights, 2 or 3 footsoldiers and some fanatics, but now I only get one footsoldier. What gives?

It has something to do with the province's Zeal. The more zeal in a province the more units your crusade should generate.

Column 11 - rebelling troop mixes is where you can specify what units will appear in a crusade. But as The Tuffen mentioned, zeal of a province is also important, as well as piety of your king I believe.

Ironic, I just came from playing an Italic Campaign and launching a crusade towards Palestine in GA mode.

Indeed, more zeal your starting province has, the greater your Crusader army will be in numbers. For an example;
If you start a crusade in, say, a province with zeal of 14%, your army would be pathetically small, considering mainly of fanatics and peasants. But, if your starting province happens to be, say Naples or Tuscany (who have rather high zeal if memory serves), your standing Crusader army would be greater and better equipped.

And as a tip, instead of just going across a province you happen to drop your army in, I advise you to plan your route across provinces with high Zeal, this way you gather more foolish believers into your Bandit Horde http://www.totalwar.org/forum/non-cgi/emoticons/biggrin.gif .

PS, who wouldn't love those Crusades? (Well, the Muslims maybe but..)

PPS, a funny thing happened to me just today when I was playing with the Italians. I planned to send a Crusade towards Palestine (which I did) but when crossing thru Constantinople and staying there for a year I received a message from the Byzantines which said that they're going to retreat without a battle. Well, I won't mind free provinces (like highly developed Constantinople) and staid there for an additional year to fortify the place with reinforcements I sent in from the Mother-Italy. After two turns, I was advised that a Muslim Jihad was coming for me and as we all know, Jihads can only be sent into places that the Arabs have lost before (like the Almohads fighting with the Spanish for the rule of Granada over and over again).
Funny things happen in Total War, who needs the Sims when you have even bigger game with micro-lads hassling here and there. Of course, Europe is a little bigger playing-zone than a single household http://www.totalwar.org/forum/non-cgi/emoticons/biggrin.gif .
