I was playing with Uesugi, my provinces had been quiet for ages, then, I had about 5 of my provinces have massive peasent rebellions, why?

Some more detail from you might help, but there are a couple of things I can think of off the top of my head:

1) Did your Daimyo just get killed/die? There is a loyalty drop after one Daimyo dies and an heir takes control.

2) Enemy Shinobi can incite rebellions - if you didn't have security forces of your own in place this is a prime possibility.

3) Did you happen to just convert to Christianity for some reason? Also hits you with a major loyalty drop.

4) It's possible they had been declining for years because you weren't garrisoning them and reached critical mass at the same time. Use the shift key to see where your loyalty is (if you have WE that is).

The circumstances were quite favourable. I had stayed Buddhist, my daimyo had not just died and was alive and well, I suppose it may have been shinobi...

Another possibilty is tax rate. If it got too high, combined with Shinobi or natural Disasters can cause unrest.

Also, if your Daimyo moves to far away from borderline provinces the threshold can be crossed and the province will have a peasant revolt.

In general, peasant revolts have to do with economic issues, followed by safety issues.
