I've never role-played but I plan on doing so one of these days. Some examples are
If your king has high piety you would build more churches/mosques, if he has low piety you would build no churches/mosques and maybe destroy some religous buildings.

Ok, I'm an avid roleplayer so bear with me.
If you have a king with weak principals or worse, the you may well go for more mercenaries than usual, if your king has killer instinct then be a warrior king (even with low stats) and execute more prisoners. If your king is a natural leader, then use him to command many battles, without necessarily getting into the thick of it, if he's inbred then marry him to his sister.
If he's unhinged, then randomly invade your allies, disband perfectly good troops, train an army of peasents and sail to gibralta for a decade. If he's fervent, crusade crusade crusade, if he has great acumen keeo a close eye on taxes and trade to increase your profits all the time, if he has low piety then destroy the churches and build the troops, ignorning all advice from the pope.
If he's a great warrior then lead the charge yourself, even into rows of spearmen, if he's worried about assassins then sit him in your capitol with a border fort surrounded by your own spies. If he's got no mercy then kill them kill them all, on the battlefield if possible.
Most other vices or virtues (exepting some you start with that are very hard to achieve) are gained through certain feats, rather than granted automatically. Most of it is common sense and (especially for crack brained and the like) some of it is the complete opposite. I liked roleplaying my pious secret athiest king, who pulled down churches all the time while keeping hundreds of bishops going, my natural leader/great warrior ended up a 7 command + specialist attacker, by inbre crackpot who was worried about assassins stayed at home and trashed the capitol.
Lots of it makes no sense in game terms, you will often harm your empire by playing to V&V, but thats half the fun isn't it?
