Since the king and princes cannot hold the title to any lands, what good does the dread, acumen and religious ratings do?
Does a prince's acumen help the province he currently is in due to his influence of being a prince? I would think they do something, but I can't figure out what it is.
And what about the king?

Well I had a king who was morally flexible -%something to bribe amount.. Not everything is too in place in the game.

A king's attributes will affect the entire kingdom in more or less the same way a governor's attributes would affect a province (i.e. high acumen = higher income). A king's or prince's piety (if he is Catholic) will also help determine his vulnerability to Grand Inquisitors.
As far as princes go: only one will be king. Eventually, many princes become ordinary generals who can be given titles. If you farm vices and virtues properly and have a horny king pumping out lots of progeny, you can eventually end up with a bunch of generals with very high stats who will make fine governors.
A king's peity will also increase loyalty in Christian provinces under your control - especially high zeal.

I am kinda new to this game and I just jumped in without really getting all the info, so I was really confused when nearly EVERY SINGLE general I had of note, was named the same thing- turns out they were all my old princes from kings past... So my entire kingdom is ruled by my royal family, it is pretty cool, i have like 20 lord Jagiellonyek's
the king has less effect than gov but applies to entire empire.
1 acumen for gov is +10% for province
1 acumen for king is +2% for every province
thus, this applies across the board.
good prince = good future kings or good generals or good govs or totally disloyal pains in the @ss
note: not mutually exclusive

Why do they have loyalty on the princes? Whenever you attempt to bribe a prince you get the 'You cannot attempt to bribe heirs' message.

Because loyalty affects other things-low loyalty can cause civil wars, for example.

Aaah.... little Willy never did get over not being the big cheese. I forget the name of the dynasty, but has anyone ever read about the fiasco that was the family Richard I came from? You had mom leading the two older sons against dad and the younger one, with them changing sides every now and then. *Shiver* Freaky time.
why certainly, nothing like a high command prince leading your elite troops with little to no loyalty to start a nice little civil war.

There's all sorts of little effects. For instance, suppose you have a prince leading an army. His dread rating effects enemy morale.
Whenever a king dies, I routinely check the loyalty rating of the princes who were passed over and aren't in the line of succession any more. Delete those who don't have at least three shields of loyalty.
Or you can assassinate them, although there's always a risk of causing the civil war you were hoping to avoid.
Kamikaze missions work, too.
