So I was looking at my long list of princes and wondering how do I know which one will take the throne?

Your next heir will be at the top of the list on the Heirs screen. Failing that, he'll be highlighted in red in VI. He's not necessarily the oldest, just the oldest of-age son of the current king.

I know there are lots of good threads on breeding good heirs, but I was wondering if there's any sense to what I've been witnessing.

I'm playing as the French and After 3 kings were Excommed and sent into Africa to die valiantly against the Almohads, I now rarely see a son born with less than 5 stars.....It's incredible. Their accumen is decent to poor but these buggers FIGHT Is it because their dads were so fearless, do you think a King dying in battle has any impact on future Heirs?

Yep. Warrior kings with high influence and high command breed mighty sons. Spend a couple generations just building and watch the quality drop. http://www.totalwar.org/forum/non-cgi/emoticons/wink.gif

The funny thing is, these kings didn't ever fight unless it was to die. I'd send them off on their own to eliminate my excommed status and that would be their first time on the field. Their sons are a different story, once their old enough to sit in a darn saddle I send them to Africa, with that many stars on 'em who blames me? They fight to the burger too, I had one prince lose all 20 of his men and still charge headlong into rows of Nubian Spears....AND live to tell about it.

Last question, related to that little tale. I can't replenish that princes ranks. Is that impossible to do with Kings / royalty?

To replenish the numbers of Prince's BGs, you have to take them to a province that can train Royal Knights (need a Royal Court) and retrain them like you would a normal unit by dropping into the unit training queue. Do this in a province with an Armourer and a Metalsmith for extra heathen-stabbing goodness. Kings will automatically fill up their numbers over time.
