wondering if these Holy orders had different armor or tactics and techniques etc.

Not really - just a little more discipline, due to the monastic discipline they all adhered to. Equipment was pretty much the same, perhaps not necessarily of the same high standards as possible amongst other knights, but then again, probably slightly better than some that could be found amongst the more secular knights.

Well in MTW terms holy knights in middle east should be a mutation of feudal knights, not chivalric, as they are. Few differences: They were wearing coats on their chainmails, to prevent them getting hot because of sun. This fashion later on appeared in Europe.
Because of better discipline, they usually used combined arms more efficiently, they positioned infantry in the front for firing purposes and cavalry behind or on wings for counter charges. In Europe cavalry often occupied 1st line because otherwise it would have problems in cooperating with infantry. Other reason was, that muslim cavalry could be stopped by spear&crossbow formations, while european knights usually couldn`t.
