I was wondering if someone would be so kind as to explain to me how I go about dismounting knights.

on the battle map, righ-click on the unit icon at the bottom and select mount/dismount

Keep in mind only some mounted units can dismount and others can only dismount during a siege.

Only get that screen if you have installed the VI expansion. If not, you have to right click (I think) on the unit icon at the bottom of the screen. A menu comes up and you choose dismount. I think all cavalry can dismount in a siege, but only the more advanced cavalry (e.g. Chivalric Knights - I only ever play as the English, so I don't know about other units)can dismount in a normal battle.
