From your nick and sig I can pretty much tell...

6 years of otakudom, not much, but still, quite a bit.

From your choices of chobits and love hina... typical boy's stuff...

Ok I am male but still prefer less ecchi of stuff, ya noe?

Is there any anime along the lines of Samurai X?

Cowboy Bebop is my favorite, with FLCL a close second.

I really like the Ranma 1/2 and Love Hina mangas, and the original Dragon Ball anime. The wacky action stuff cracks me up.

-Bible Black - i know its Hentai but the animation is great, the story is great, and so are the girls :)

I hadn't realised i'd seen so much. but i haven't completed watching some of the series yet, Full metal Panic, X tv, Bastard and Lain.

Favourite so far are Chobits and Fist of the North star( probably the oldest one of the lot, but you gotta love it when Kenshiro punchs people and their heads explode).

I highly reccomend Chobits, Princess Mononoke, Vampire Hunter D: Bloodlust Tenchi Muyo and Street fighter 2 the animated Movie if you just started getting into anime or thinking about watching some. These give you a good mix of what anime is about.

If your looking for anime to make to think, Ghost in the Shell and lain are good places to start.

Also everyone must see Akira, arguable the greatest anime ever, i thought it was very good, but the greatest, maybe...

Also worth checking out are some japanese movies by Takashi Miike. Think of them as live action animes. Some of his films; Ichi the Killer, Audition and Dead or alive.

People who have just seen DBZ, Gundman, etc on Cartoon Network/Toonami haven't seen what real anime is. Plus they normally cut those anyways, so your still missing out on the good bits.

Almost forgot. Reign the Conqueror. Its and Anime about Alexander the Great. It pretty good, but the animation is abit revealing, but thats the director's style. i forget his name, but he made Aeon Flux and done one of the shorts in Animatrix; the really weird one at the end, matrixulated (spelling?)

I've only seen the first few episodes but i have enjoyed so far, its pretty cool how they mix in sci-fi with the story.
