Does anyone know what determines the stockpiles of a castle/fort?

Is it the level of farms the province has?
How do you increse stockpiles.

I want to make the horde attack a heavily fortified citadel in khazar, but it says

if attacked it will hold out for 2 years


How do i increase that, can you increase that?

default, the castle level determines the capacity. lower the ratio of garrison to capacity, the longer the castle would last under siege.

modding the build prod files would allow you to up the max capacity of castles, making all sieges longer.

BTW, for all these purposes, cav counts as two (one rider, one horse)

Build all the fortifications you can such as a ringwall. They'll increase the amount of time defenders can withstand a siege.

Apparently those would affect the casualties taken only, not the state of supplies (length of siege). Length of siege is dependent on the inital no of men to garrison capacity, not the casualties.

The size/level of the castle and the number of defenders determines the lenght of a siege.If you haveonly about 20 men left in a fortress or citadel then it will tell you that this castle is unlikely to fall without a direct assault.However if the attackers decide to end the siege by attacking the castle then you do not have enough men to hold them off.Talk about giving with one hand and taking away with the other.

There are some people who leave a unit of royal knights inside a citadel (with additional fortifications) or even a fortess to allow the AI to assault. The AI suck at siege assault and the citadel defenses are often enough to destroy attacking forces.

Yep, you are correct. Still, it should enable the defenders to withstand a siege longer because if you read the description for ringwall it does mention that more supplies are brought in from the surrounding villages (or at least something to that effect.)

nope. upgrades don't affect castle capacity. just checked in gnome.

also, if you attack from another province and call off the attack, it still cancels the assault attempt.

thus, it's possible to leave a half dead peasant unit in the castle and it wouldn't die but the enemy would be stuck sieging it year after year and suffer casualties.
