Here's mine...
1. happiness buidlings, mosque/church any milita buildings, acadamy of surgents, and watch tower/border forts, brothels etc... ALWAYS build these buildings IN EVERY province, they are almost always quiet cheap, and offer quiet a bit of improvement to happiness.
2.Ur king/sultan: this is very VERY important espically in the later stages of the game when you have big empires, ALWAYS keep him in a place with a port and sea connection to ALL of ur empire, the key is that the longer it takse for ur leader to reach certain province, the more prone it is to rebel, in fact this is can often get so bad (if ur leader is stuck on a island and the sea rout is broken for example) there is almost nothing you can do to stop ur kingdom from desolving.
I think you should almost never venture ur leader into battle by this stage... in fact... don't even venture ur heirs..... i've had the sad experience of having my kingdom inherited by a heir stuck in ireland and all but 3 province rebelled the next turn and then a civil war the next...
3.garrison: always keep a small garrison (like the 100 men suggested) in every province... things like bandits often don't seem more related to garrison instead of happiness.
4.agents: first of all always make sure all ur province are converted to ur religion... espically those ur leaving without a large garrison, this is VERY important... taking over portugal as the almos for example is made A LOT easier if they are mostly muslim instead of catholic. always keep anti spy units/buildings in every province, if possible using spies is the best... if ur not using VI then hoard a ton spies in rebel prone province... if not just keep a spy in every province, it will increase loyalty and more importantly make sure other spies don't destroy ur loyalty. (catching assains help a ton too :P)
In general.. the most important is #2.. then #3.. but the other 2 can be done and lower the cost of garrison... and if a province is very happy and loyal it is also more likely have loyalist rebellion if u lose it.
