Anyway, offed all of the factions except the Byzantine who have a single ship left. But whenever I try to destroy that ship, it moves to another province, and whenever I try to destroy it at that province, it moves back to the original province, and so on and so on and so on....
What can I do???

Fleets move at the rate of the slowest ship, so reorganize by ship type.
The program compares the speed of the attacker and defender and determines if there will be a battle, so attack with your fastest.

Chances are it is a dromon and unless you have dromons yourself, it is near impossible to catch them. Split your fastest ships into pairs (should be speed 3 for most catholics and muslims). Use multiple pairs to attack in 1 turn to increase the possibility of catching it.
VI fixed the slippery ship somewhat IIRC.
Look at the range of that ship....place several of your warships in every seazone it can move into.

that doesn't help. there's no auto-intercept feature.
if that blasted ship is a dromon, you may be screwed.
that ship can't possibly defend it's homeland though.
just kill off the royal family one way or another and eliminate the faction and the ship disappears.
note: dromons have speed 4 and all other ships have 3 at best so not very good odds at catching it.
