Just wondering; I haven't seen a way to do this yet. But it sure would be great if I could retrain some of my golden-chevroned Hastati as Legionary Cohorts!

Not from what I have seen. You will need to slowly replace these troops by a steady stream of disbanding and recruitment.

Fortunately you can always find a use for the old troops as garissons somewhere around your empire.

It was rather funny in my brutii campaign, the civil war kicked off only a few years after the Marian reforms, so the other houses and the Senate mainly had pre-marian legions... As you can guess I had the post-Marian cohorts. ~D

Same thing happened to me. I assulted Rome with 6 Roman Cohorts against a gaggle of Hastati and Principes, with one early legionary unit. My archer aulxilia made them route before they could even get to me.
