Continuing the game after completeing victory conditions

I have two provinces left to take and I will have completed the victory condition of 50 provinces owned as well as Rome. My question is once I meet this, will I still be able to continue that compaign in an attempt to make the rest of the world mine or does it just end?

Is there anyway to make it keep going of is supposed to end?

Quicksave using Ctrl+S when the victory screen appears. then you can reload the quicksave and continue on

Or you could just allow Rome to rebel after you've taken it and then make sure that later after you've conquered the map you take Rome last.
