What are these essentially, as they just seemed similar, except with a different campaign on viking and harder battles.

I don't think there was that much tweaking in the engine/map/AI with MTW: VI.
VI adds a lot of units, couple of factions, and a new campaign.
It's pretty good IMO.
To be honest I would've liked to have seen another expansion pack or something, but I guess that's what mods are for. I should start using them...

Viking Invasion is a very good addition to the MTW. Smaller map and vikings make it feel quite different from medieval.
IMO, the major difference between MTW before and after the Viking is that ( generally) you cannot pillage a province without taking its castle. Makes a big difference because the AI is able to build empires now. Another nice feature is the pre-battle screen which makes planning for the battle much easier.
In general, I think that the AI is slightly better after Viking (both in the new Campaign and in the Main Campaign).

Also you saw a list of VnV gains at the end of each turn. PLus the graphics engine is upgraded(only matters if you have a computer that can use it).
The new units really help out, especially Arab infantry for the non-Turks.
With VI all units got +2 morale so less routing. The patch for VI also removed the "swipe bug" (that got introduced with MTW 1.1) that could give charging units (especially cavalry) infinite charge bonus and run down several enemy ranks.
