On huge size, some unit max size is 80, like gladiators, beserkers, druids, etc. How do you change that number?

It's in the export descr unit.txt file.

type carthaginian peasant
dictionary carthaginian_peasant ; Peasants
category infantry
class light
voice_type Light_1
soldier carthaginian_peasant, 60, 0, 0.7
attributes sea_faring, hide_forest, can_sap
formation 1.2, 1.8, 2.4, 2.4, 6, horde
stat_health 1, 0
stat_pri 3, 2, no, 0, 0, melee, simple, piercing, mace, 25 ,0.73
stat_pri_attr no
stat_sec 0, 0, no, 0, 0, no, no, no, none, 25 ,1
stat_sec_attr no
stat_pri_armour 0, 3, 0, flesh
stat_sec_armour 0, 0, flesh
stat_heat -1
stat_ground 2, 1, 0, -1
stat_mental 0, low, untrained
stat_charge_dist 30
stat_fire_delay 0
stat_food 60, 300
stat_cost 1, 120, 100, 20, 20, 120
ownership carthage, spain, numidia, slave

The first number (in this case-60) is the number of soldiers at the normal or default unit size. Do not exceed the highest unit size in the game...check the macedonian phalanx pikemen for the number...don't forget to back up before you change anything!

you will probably really unbalance your game if you put berserker druids and other special units to the highest unit size, I mean berserkers have 3 hitpoints !
it' will make them nearly impossible to kill.
but that 's my opinion , do as you wish
