Can you actully seel Hose farmer places, Forts and co?
If so how?

You can destroy them, and get some cash out of it, by rightclicking on it in the review panel at the bottom of your screen.
I don't think selling is an option in any way. Were you thinking of the possibility of selling it to another province, or just getting rid of it?

Im playing my first game and trying to follow the English Guide in the Guide forms to the letter to get a feel for the game.
Its says "Sell Fort and HOrse Farmer in Aquitaine" so I assume it means destroying it and getting some money out of it.
I think the idea is to abandon the provice.

Yes, destroying the buildings in a province before abandoning it is a well-known tactic, not letting whoever takes that province get the benefit of any tech.
"Aaaargh, raze the towns, burn the crops and salt the earth", all that stuff. ~D
They mean destroy them and abandon the province. This won't do for the GA game, but is okay for the conquest game. Personally I don't abandon provinces.

I prefer to try and hold Aquitaine at the beginning, developing it to make better cavalry. I usually expand up into Scotland and over to Ireland and quickly develop one British province into a ship builder. Once I get a few ships to connect Aquitaine to the Isles I can reinforce and balance out the various armies.
As soon as the French are preoccupied elsewhere I capture stupid Flanderses and that completes the connection, then push out into Ile de France . . .

I would never sell the Horse Famer as the English in Early. Build Hobs every turn and utilize the early LC advantage. It ends your archer troubles very quickly. Usually I rush the French and hope the HRE is busy. After the rush I bribe the Welsh and take teh Longbowmen to Europe. THe Scots I bribe and stabalize the territory.
The only reason to give up Aquitaine is to avoid war with the Spanish/Aragonese and excommunication.
If you start in Early excommunication isn't a big problem though. Kill the French and defeat subsequent HRE and Aragonese invasions (preferbably taking their lands as well).
That's my favourite tactic at least...:)

Yep. I build hobilars in Aquitane and use them to sieze Navarone. (easy to defend and you can build my favourite cavlary unit - Jinettes) I don't worry too much about war with Aragon, since they have only one province and I plan to seize it soon - it is similarly useful as Navarone.

Jinetes are awesome and are worth invading Iberia for them alone. If you're a Catholic faction at least.
Although they have no charge they are very useful as skirmishers and drawing out units out of formation.
You can't avoid war with Aragon if you have Toulouse/Aquitaine/Navarre. The AI is set to attack France no matter what.

Lol. I usually don't let any provinces go. I may bribe the attacking army, but if it's a king or prince, I bribe a nearby army and take it again and kill the noble. Also...I usually play as the HRE.

Attack Flanders in the 1st turn then keep reinforcing with archers from wessex and all your RK's. its nice and flat so your bow men should slaguter the attempted french retaliation, whilst your cav flank them. Then get the bribed welsh longbows there asap! you should be able to wipe france out of existance in about 10/15 turns.
Keep Aquitaine, It usually turns into one of my most developed provences by the late game.
Destroying something is the equivalent of looting something in this game. Disregarding the laws of physics, you can't loot a building and leave it standing, you have to burn it down aswell, even if this costs 1000s of florins and years of waiting for the structure to be rebuilt.
