There are “buildings” that we can’t destroy during the game, like the walls, farms, governors houses…
Is there a way that we can change this, so we could destroy it during the game…

Not to my knowledge, no. No one's ever posted that they're able to.

Whwn you add a new complaex to the game all the building in it are destroyable.
what would happen if you created a duplicate Walls complex Call it somthing slightly different and then remove the original complex?
(assuming that you sorted out all the text tags, ui cards, etc)

But doesn’t’ that create problems with the AI?

Do you mean in battles?
There is a method to do stone buildings burnable. Look at here:

If you looked for another method... no idea.

Not in battles, but after battles, when you conquer the city, so you don’t have civilization problems!

Do you mean like the annoying problem when you capture a huge city, and you can't destroy the Imperial Palace that is there so you have Unrest forever?

Like in MTW where all christian building where destroyed if you took over a province with a muslim faction or vice versa? This would be great. I hope somebody knows how to do it.
