My faction is the Franks who are Pagan. Would I want to try to keep all my generals in this faith, or do I welcome Christians? Also, capturing a Christian town, do I destroy all of the current religious buildings and rebuild pagan structures or move in a Christian general, if I have one, in as governor?

If it is a large city of a particular religion, with factors like bordering provinces and generals of the same faith, tearing down a place of worship could simply lead to rebellion. Paganism has good military bonuses necessary for a horde. If I want to change religions in a large city, I would only do so after massacring a population. Christian bonuses for law and happiness are probably most helpful in the larger cities and can have a military benefit in that garrisons can be shrunk in size. I started a game with game. I tend to keep to build according to the existing religious adherence of a population, if I do not massacre. I would keep the Christian buildings if the city is large and will be developed for its revenue, or simply if demolishing them will force you to garrison the city heavily. I tend towards keeping what I find in terms of religion.
