Where can I change the amount of troops per stack and can i in mid campaign??

If you are talking about max # of troops per stack you can not. It is always 960. You can change unit size in the gameplay options, but it will not affect any current campaign.

BTW, a newbie is new to the game, trying to learn it, while a noob is someone who either can't, or won't learn.

Perhaps it would be helpful to know which TW game you´re talking about, Breeze.

In MTW there´s a limit of 1260 men per army, in Rome the absolute maximum is 4800, as far as I know there is no limit to the number of men per army.
The unit size can be changed only at the beginning of the campaign, in the graphics options. Once the campaign is started this setting will be valid for the whole campaign, even if you change the settings.

16 x 120 (1920 men) is max for 1 army(stack) in a Custom battle or mp in STW. ( i havent played the campaign in a long time, But i beleve that is also 16 x 120 max for Campaign).

None of the games allow you to change this option mid game.

Slightly incorrect. Royal Pikemen have 241 men per unit on HUGE settings.

241 x 20 = 4820

4821. This is the absolute maximum you can have on RTW.
