Cavalry is no good during a seige, and I have yet to play with feudal foot knights or thier later counterparts. I've looked through the manual and I've played through the tutorial, and still nuttin'. HHHHEHEEEELLLPPPPP!!!!!!!!!!!!!!!!
When you begin the battle right click on the unit and you'll have the dismount option if the unit can dismount. You can only do this before you click "begin battle".

Chivalric Foot Knights are especially nice as you can dismount them for any battle and they'll tear through pretty much anything thry can catch.

It's important to say that most of the cavarly are dismountable only during a siege, however there are some who can dismount in open battles (column 69 in Gnome editor)

I'm not sure, but if your castle is being attacked you don't have any reinforcements.

Not from the pre-battle screen. You can only dismount during the deployment face of the battle, but perhaps it is possible to cycle reinforcements and dismount all those you want to to fight on foot. This may mess up the order of your reinforcement queue, though.

You can dismount when you´re the attacker, too. And some units can dismount in every kind of battle.

In VI there's a button at the top of the screen that allows you to replace a starting unit with a reinforcement unit pre-battle (not sure about vanilla MTW). You can cycle through the reinforcement units and dismount those that are dismountable, then continue cycling through the units until your original starter unit is back on the field.
TBH I've never actually tried to do this to see if it works, because I so rarely dismount units in the open. But I do know that in VI you can cycle through the reinforcements list and dismount units.
