Would it be possible (as it was in MTW) to have mounted units dismount before a battle? Say if the terrain was unsuitable for cavalry ops, or during a siege. You wouldn't have to create any new units necessarily- just find a close analog in existing units- horse archers becoming foot archer for instance. Not only would it be realistic (and cool), it would also give you more strategic flexibility.
I bet someone's gonna tell me it can't be done.

Or, we could just compromise and get some centaur units!
It would be way more accurate than like, say, putting the Aztecs in the game, I mean who would do that?

Silly goose.
MTW 2 has the Aztecs for a reason. It goes to 1580 or whatever(can't remember the press release- for shame), and as anybody knows, "In 1492, Columbus sailed the ocean blue". Plus Cortez came over in the 1520s or so as I recall, but I could be way wrong on that.
And who doesn't want to have the option in diplomacy, "Send Diseased Blankets"? I can say I can hardly wait!

Not possible. The relationship between the strat map movement points of Infantry, Cavalry, and Artillery is hard-coded. You can increase or decrease all of them, but not individual units.

You can't give individual units a different speed on the map. They're either cavalry, infantry or siege weapons in all parts of the game; you can't be infantry on the battlefield and be cavalry on the campaign map.
Not that I'm aware of, anyway.
