I find it rare that the AI just walks into one of my ambushes. I have found that if I leave a small force to guard a pass in ambush mode around the Alps, that a diplomat will more likely bribe my captains before they ever ambush anyone. However, I have developed a tactic that seems to work nicely when a large enemy force is nearby, at least has never disappointed me.
Firstly, I set up an ambush with a medium sized force about 600-1000 depending on cavalry availability, which is the bomb for ambushing infantry in column formations. Secondly, I send out one unit of cavalry to sit next to the large enemy force. The AI seems to not resist the temptation of stomping on this small unit, especially if the aggresive level is set in one of the data files (I forget which one) for the faction you are tempting to ambush. The AI attacks and you get the intro battle screen describing the forces involved, your job is now to select withdraw. Your cavalry unit seems to remember where it came from and will seek safety back in your larger force waiting in ambush. The enemy AI force seems to want to immediately follow-up chasing this force (the closer the better). Voila, the AI walks into your ambush.
Has anyone else tested this out? Perhaps, certain less aggresive factions may not take the bait.
