Chinese Chicken Curry

Serves 4
INGREDIENTS:
1 pound chicken breasts, boneless, skinless
2 potatoes
1 red onion
2 tablespoons oil for stir-frying-I use sesame, or a mix with soy oil.
2 tablespoons curry paste (traditional Indian yellow curry paste is best)
3/4 cup chicken broth
1 teaspoon granulated sugar
Salt and pepper, to taste
1 cup long-grained rice
1/2 teaspoon ground coriander, or to taste

PREPARATION:
Chop the chicken into 1 1/2 inch pieces. Peel the potatos and red onion. Cut into pieces approximately the same size as the chicken.

Heat the wok over medium-high to high heat. Add 2 tablespoons oil to the heated wok.

When the oil is hot, add the onion. Stir-fry until the onion is softened and translucent. Add the curry paste and stir-fry until fragrant (about 2 minutes). Add the chicken and potato and stir-fry for about 5 minutes so that the chicken is browned and coated with the curry paste.

Add the chicken broth, sugar, salt, and pepper, cover, and simmer over low heat for about 15 - 20 minutes, making sure the chicken is cooked.

While the chicken is simmering, cook the rice. In a medium saucepan, bring the rice and 1 1/2 cups water to a boil, uncovered, at medium heat. Turn the heat down to medium low. Cook the rice, partially covered, until the water is absorbed and you can see holes or "craters" in the rice. Turn the heat down to low, cover tightly and simmer for another 15 minutes.

Taste the curried chicken and adjust the seasoning if desired. Serve hot over rice. Sprinkle the ground coriander over top.

Excellent after a couple of beers. :2thumbsup:

Taco's!!!

Made this recipe up myself.
(3 to 4 persons)

Taco's :
200 gr. flour
200 ml Milk
2 eggs
Chillipowder (1 spoon)
Salt&pepper (quite some)
Bit of olive oil & lemonjuice

Mix it all up and bake them like you would with pancakes.

The filling :
250 gr. Mushrooms, sliced in small pieces
1 onion sliced in small pieces
1 paprika sliced in small pieces
500 gr of minced meat
3 spoons of sambal (=nam prik ?)
salt,pepper,thyme,chilipowder

Fry everything in 1 pan and once done put it on the "pancake" , put cheese on it and fold it shut. Then put it under the grill for 5 minutes (200c')

Also nice to add vegetables in it like broccoli

or beans.

Finally, take it out of the grill and add crispy lettuce to it.

It's a nice chagne from potatoes/rice/pasta as the main filler.

Hmm.... I have a lot of recipies.

Let's see, here's a good one. Sorry, but I cook without measuring, so you're going to have to bear with me here.

DemonArchangel's Skewered Lamb (Warning: Burns like a mother)

You Will Need:
*A crapload of bamboo skewers
*Leg of lamb, meat cubed.
*Habanero peppers
*Salt
*1 tablespoon of sugar
*Pepper, both black and white
*Soy Sauce
*Fresh Squeezed Lime Juice
*Rice Vinegar
*Bit of cooking wine, preferrably the Chinese stuff.
*Cumin
*Bacon
*A few spoonfuls of minced garlic
*Recipie of Demon Archangel's Peanut Sauce (Also Burns like a mother)

1.) Combine enough soy sauce, cooking wine, rice vinegar, some salt, the sugar in a glass dish, enough to cover the lamb. Allow to marinate for maybe 30 minutes to an hour.

2.) Slice habenero peppers into small pieces, take the seeds.

3.) Remove the lamb from the fridge, press the habenero pepper seeds and lime juice into the surface of the lamb. Wrap cubes with the bacon and sprinkle surface with pepper.

4.) Place the cubes onto skewers with about 1/2 in. space between the pieces. Grill over charcoal fire until crispy on the outside and bloody on the inside.

5.) Serve with DemonArchangel's peanut sauce and maybe some watercress salad.

DemonArchangel's Peanut Sauce:

You will need (4 C's):
*Chunky peanut butter
*Chili Oil
*Crushed peppers (preferrably Thai, I like their flavor)
*Chopped canned chives
*Cilantro (Fresh)

1.) Mix peanut butter liberally with the chili oil, crushed peppers and canned chives (a 4:1:.3:1 ratio)

2.) Dip Demon's lamb skewers in it, and enjoy.

But, DemonArchangel I'll have to try your's sometime. Chili is nice :2thumbsup:, but if I do make it I'll use less chili! I may need my tongue in later life.

This is my own invention for cold wintery nights.

Hot Pepper Stew.

You will need:

A big stewing pan.
A wok or large skillet.
A chefs knife. ( a proper one you can 'rock' over the food to chop it finely)
A spatula.
A tablespoon.
A boiling pan.
A kettle.

Serves two.

Ingredients.

1 large onion
4 cloves of garlic
1 'inch' of fresh ginger
3 leeks (fresh)
4-5 fresh chilli peppers
1 green capsicum
Table spoon paprika
1/4 lb mushrooms (chestnuts mushrooms are nice, but any will do)
2 lbs of stewing steak ( I buy a potroast and cut it into 2 inch cubes)
4-5 (new)potatos unskinned.
Olive oil (you can use any decent oil if you so desire)

Preparation.

Boil a full kettle of water.
Cut the beef into nice big chunks.
Chop the onion.
Peel and chop or grate the ginger. (I like it very finely chopped)
Peel the garlic cloves.

IMPORTANT.

On the chopping board hit the garlic with the side of the cooking knife, to break the fibres.

Finely chop the garlic.
Slice the leeks.
Chop the Capsicum.
Quarter the mushrooms.
Wash the potatos.

Method.

Put the boiling water into your big stewing pan, with the heat on high.
Throw in the beef, and bring to the boil.
Allow the beef to boil for about 15 mins.
While the beef is boiling, put olive oil into wok/skillet.
Add the mushrooms and chopped pepper.
When the mushroom are starting to fry add the onion, garlic and ginger.
Stir fry until the edges are becoming browned.
Drain the oil from the wok/skillet.
Add to the beef.
Add the chilli and the paprika.

NB: if you like it extra hot, you can cut the chillies, although I find it hot enough when they are put in whole.
Cover and turn down to simmer.
After approximately 20 minutes add the leeks.

Let the mixture stew for about 4 hours on a low light.

Stirring occasionally.

You may need to top up the stew with hot water from the kettle from time to time.

When you can 'cut' the beef with a spoon boil the potatos.

When the potatos are ready, add them to the stew.

Enjoy.

Add less sugar ? How do you make it now ? I think it also depends on what kind of fruit you use. Do you mix the fruit or just use the juice ?

Quick Smoothie breakfast for many.

Mixing bowl & electric hand mixer.

Four bananas
Big handful frozen blueberries
Pint of strawberries
A capful of vanilla extract
One cup plain yogurt
Orange juice to thin it out to desired consistency
Vitamin oil, milled flax seed, whatever health product you like

Mix!

Fastest way to feed the kids (or you) a healthy breakfast you'll ever come across.

Add less sugar ? How do you make it now ? I think it also depends on what kind of fruit you use. Do you mix the fruit or just use the juice ?
I'm following an Italian recipe, but I don't know whether it's me not heating the sugar+water mix to the correct temperature (I haven't got any proper thermometre) or if I misunderstood the recipe (the reason why it's easy to misunderstand is because it was so fragmented, you had to mix 3 different recipes to get one form of sherbet, but I wanted another form of sherbet, and it looked completely different and without instructions for how to compensate for that when putting the 3 part-recipes together. And if this sounds complicated it was ten times more complicated in the actual recipe than I make it sound here :dizzy2: )... Anyway I'm just wondering if someone has been successful with this and whether they used less sugar or did a better job with the heating of the sugar+water mix...

The recipe is something like this:
- beat up 2 egg whites with a spoon or so of sugar until it gets all fluffy
- heat 100 g sugar + 1 deciliter of water to 130 degrees centigrade, then while using a whisk let it cool down to 110 degrees
- at the time the sugar+water mix reaches 110 degrees centigrade, whisk the egg mix one last time, then pour in the sugar+water mix while keeping the whisk going
- keep the whisk going for a minute or two
- add the fruit juice or mashed fruit (the recipe recommended additional sugar+water mix too for some flavors, but it tasted too much sugar already as it was...)

Pan Galactic Gargle Blaster

1. Take the juice from one bottle of that Ol' Janx Spirit.

2. Pour into it one measure of water from the seas of Santraginus V. (Oh, that Santraginean seawater. Oh, those Santraginean fish!)

3. Allow three cubes of Arcturan Mega-gin to melt into the mixture (It must be properly iced or the benzene is lost).

4. Allow four litres of Fallian marsh gas to bubble through it. (In memory of all those happy hikers who have died of pleasure in the Marshes of Fallia.)

5. Over the back of a silver spoon float a measure of Qalactin Hypermint extract. (Redolent of all the heady odors of the dark Qualactin Zones.)

6. Drop in the tooth of an Algolian Suntiger. (Watch it dissolve, spreading the fires of the Algolian Suns deep into the heart of the drink.)

7. Sprinkle Zamphuor.

8. Add an olive.

9. Drink . . . but . . . very carefully . . .

Ah, the pan-Galactic gargle-Blaster...can't recommend them enough... a sensation rather akin to having your brains bashed out by a block of gold ... wrapped in lemon

any good risotto or curry recipes? (or maybe bhindi bhaji, can never get the recipe right)?

For a change, something simple that even a retarded monkey could make:

Ingredients:
Tomatoes, large (number depends on the number of people present, usually 1/person)
Mozzarella (look up the number of tomatoes, similar)
Origano (leaves)
Olive oil

Preparation:

First things first, wash everything (except the oil, no need to wash that), and lay it out on a table.

Take a tomato, slice into thin slices vertically (that makes them thin, but fairly large). Do the same with the mozzarella.

Then, put the tomato slices on a platter, side-by-side (not to be stacked on top of each other), add a slice of mozzarella on top of each tomato slice. On top of each (piece of mozzarella, which is on a tomato slice) put a single leaf of origano, then pour olive oil over the stuff.

Serve.

It's simple, and when you get a surprise visit, have nothing prepared and have no time, make this, it is fairly exotic, filling and good for you.
