I don't have the game yet, but I've seen some screenshots of characters with a Dread characteristic.

they didn't replace dread with chivalry. It's now dread/chivalry. Depending on traits you can have one or the other and dread can become chivalry or chivalry dread
Plus: we call it Nuernberg. One of the mercantile centers in the Middle Ages....

so how do you decide who to place in charge of cities if no one has acumen? Rely only on his traits and hope for the best or what?

Check his traits for what he gets in bonuses and penalties.

Losing accumen doesn't seem to be much of a loss, as traits can still influence tax and trade income.
Influence appears to be out. Looks like it's been replaced by dread again just like MTW, and now with chivalry as a negative dread value.
I'm glad loyalty is back, wich implies there is some sort of civil war feature.

Or maybe not, maybe it just represents the resilience to be bribed by a diplomat, or "convinced" or "seduced" by a princess...

Slightly more on-topic, I have a question for those with the game. I understand there is attrition for Crusading armies the longer the are outside of friendly soil, but is there a similar mechanism for normal armies that spend too long in enemy territory? If not, I hope it can be modded in, that would simply be awesome...

Eh, its not really attrition.
If you don't go as quickly as possible to your crusade target you lose men. Thats it. You can spend as long as you want in enemy territory (well...)...but as long as you keep moving towards Jerusalem or whatever the armies size will stay the same. If you turn back however then you can say hello to mass desertions.
